Ingredients
1/4 cup melted butter
6 eggs
1/2 tsp salt
1/2 tsp baking powder
1/3 cup coconut flour
1/2 tsp vanilla extract
Instructions
Preheat your waffle iron.
Whisk together the butter and eggs.
Add the dry ingredients to the mix and whisk until smooth.
Let the batter sit for about 5 minutes to thicken. If the batter gets too thick, add a splash of unsweetened almond milk or water to thin it slightly (do not add more than ¼ cup).
Pour about ½ cup-3/4 cup batter into your preheated waffle iron. The amount of batter may vary depending on the size of your waffle iron.
Cook the waffle for about 5 minutes or until golden brown.
Serve while hot with keto maple syrup, a few fresh berries or enjoy on its own!
