Madeleine cookies originated from the Liverdun and Commercy region of France as far back as the late 1700s. These cookies are traditionally served with tea or coffee, these exquisite tea cakes are made with simple ingredients, with variations including lemon or lime zest, honey and even maple.
Legend is that the pilgrims moving through that era would wear shells as the symbol of St. James, and thus the shell shape of madeleines was born.
These keto madeleine cakes are with almond flour and are still traditional madeleine cookies yet gluten free.
INGREDIENTS
1/3 cup almond flour
1 tbsp coconut flour
pinch salt
2 egg yolks
1 egg
1/4 cup granular sugar substitute
1 1/2 tsp vanilla extract
4 tbsp unsalted butter, melted
1 cup sugar free chocolate baking chips, melted
DIRECTIONS
Preheat the oven to 375°F. Using a brush, coat a madeleine pan with melted butter.
In a small bowl, sift together the almond flour, coconut flour and salt. Set aside.
In a medium bowl, beat egg yolks and egg until light and fluffy (about 5 minutes). Add in sweetener and vanilla extract. Continue beating until ribbons form (about 5 minutes).
Using a spatula, gently fold in the dry ingredients into the wet ingredients. Then fold in the melted butter until combined.
5. Scoop into each mold of the
madeleine pan. Bake at 375°F for 10 minutes.
6. Flip pan over onto a tea towel to release the madeleines immediately after baking. Let cookies cool on the towel before dipping in melted keto friendly chocolate chips.
